Michelin-starred chef Diego Cabrera tries his hand at cocktails
Cocktails, cocktails and more cocktails. Salmón Gurú is the latest venture from Diego Cabrera, the renowned chef behind the Michelin-starred Madrilian Club Allard and also Dstage (another restaurant well worth visiting in Madrid). But first things first: there’s no salmon here – he chose the name for the “perseverance, tenacity and fighting capacity” of the fish. In the place of salmon, you’ll find a list of 25 cocktails that offer a contemporary twist on classics, as well as a selection of Champagne cocktails. The walls are stacked floor-to-ceiling with liquor bottles; it feels like Manhattan in the 60s. Sit at the barman’s table to see how things are done, or a private booth if you want something quieter. The interiors and art change frequently, so you always have an excuse to come back.
If you’re brave enough, go for the ‘genuine’. It’s made from the vintage liquors that can no longer be found, and served with real ice from the river.
