First-class fish in supremely simple surroundings

Don't be fooled by the paper tablecloths: Es Xarcu is charmingly low-key yet deceptively pricey. On a pebbly virgin beach near the billionaire enclave of Porroig, is where you'll find Ibiza's finest salt-baked sea bass, to be enjoyed with a bottle of icy pale rosé beneath the shaggy palm-leaf awning. The raised terrace is great for watching Es Xarcu's little speedboat ferry diners back and forth from their yachts bobbing offshore.

The all-too-brief raones season (from September 1st) is your chance to taste these tiny, tasty golden fish, native to Ibiza and Formentera.
