Progressive, seasonal cooking

Cebo restaurant earned a Michelin star in 2018, and for good reason. The menu focuses on the flavours of Catalonia and Madrid, using mostly seasonal produce: expect big things from some simple ingredients, such as calçots (roast scallions), callos (tripe), espardenyes (sea cucumbers), red king prawns from Palamós, Madrid calf shank, and Costa Brava baby squid. With just 25 covers per sitting, the vibe is refined, but also intimate.
