Andrea Berton chose the futuristic Porta Nuova district for his namesake restaurant

The focus here is on elegant, minimalist cuisine, with a menu that changes depending on seasonal availability. Ask for the broth tasting menu: a 12-course menu where broth is the protagonist – to drink, to be poured, or to be paired with unlikely ingredients. Berton was awarded a Michelin star in 2014 and it’s easy to see why: light, modern dishes made with impeccably sourced ingredients are kept purposefully simple, and customers are regularly ushered into the kitchen to meet the chef.

Ask to be seated at the chef’s table, where you’re given a front-row view of the action in the open kitchen.
